There is one of three things going on (or a combination of two and three):

1. People who aren't HTML/CSS savvy enough to do anything beyond install a theme (this would apply to a lot of blogs). The next two aren't mutually exclusive -- that is, it could be one or both.

2. Web designers are control freaks. We want to control the placement of every pixel on your screen. This often comes out in "fixed" screen widths, and because it's standard to design for 800x600 screen resolutions, in higher resolutions this results in a lot of white space.

3. Readability. LOOOOOOOOOOOOOONG lines are a pain to read. Shorter lines are easier to read.
